The story began around forty years ago, when An and Ronnie Herman took over the café and hairdressing salon of An's parents. Positioning himself behind the cooker, Ronnie Herman achieved instant notoriety with his now infamous mussel dishes. After studying at the International Culinary School "Ter Groene Poorte" in Bruges, his son Sergio joined Roem van Holland, as it was then known. On his days off, he would join his father on a culinary voyage of discovery around the best eating establishment in France. Sergio started his culinary career at home, under the guidance of his father. His arrival turned the mussel restaurant into a world famous gastronomic destination. Sergio Herman is regarded as one of the best chefs in the Benelux. Maintaining this reputation requires more than preparing extraordinary dishes alone. Sergio sees it as his duty to surprise his customers continuously with dishes that have never been seen before, and never been tasted before.
